How to Season an Electric Smoker: Step by Step Guide
The technique I use to season my electric smokers is somewhat general. Still, it will apply to nearly any electric smoker.
The following is the most widely accepted approach. You can be sure you’ve completed things correctly if you follow them.
Make Sure Your Smoker Is Completely Assembled
Follow the manufacturer’s instructions carefully when you’re finished putting your new smoker together. Then, when you’ve finished, check for any missing, broken, or potentially defective components that may need replacing.

Wash the smoker’s insides with a damp cloth to remove any dirt or debris that may have accumulated in transit. It is optional, but it will help things go more smoothly when you’re ready for seasoning.
Use a Thin Coat of Cooking Oil to the Interior Surfaces
Lightly coat the interior surfaces of your smoker with a thin layer of cooking oil. You can use any cooking oil, such as vegetable oil or peanut oil. Cooking sprays work well for this purpose too.
Make Sure the Smoker is Completely Dry
Allow the smoker to dry completely before continuing. It may take up to 24 hours. So plan to get started with your first smoking session as soon as possible.
Finish the Smoker’s Surface by Rubbing a Very Thin Layer of Cooking Oil
Use Clean Cloth to moisten the surface
Use a fresh, clean cloth to moisten the surface of your cooking oil. Thoroughly rub this over every inch of the smoker’s exterior surfaces, making sure to get into all of the nooks and crannies.
Turn on the Smoker
Make sure the smoker is completely dry before you plug it in. Once it’s turned on, please leave all of its components alone and Completely Open any Vents. If you have not already, fully open the vents and go them that way throughout the seasoning process.
Set the Temperature to Maximum
Once the smoker is lit and you’ve left all of its vents completely open, set it to maximum temperature. It will be somewhere between 275 and 350 degrees Fahrenheit for most electric smokers.
I recommend using a remote thermometer or wireless probe to monitor the smoker’s internal temperature, as this will ensure that you don’t overcook anything as it seasons.
Leave to Heat Through for 3 Hours

How to Clean Your Smoker After Seasoning
Once your smoker has been seasoned, you should not need to clean it very often. You can clean the interior surfaces with a damp cloth to remove any excess oil, but don’t

If you need soap or detergents on your electric smoker, avoid getting any water inside it as this could cause damage.
I recommend cleaning your smoker after each use, or at least every few uses, depending on how often you smoke foods in it.
Should You Use Wood Chips When Seasoning?
In my opinion, the best way to season an electric smoker is not with wood chips. Therefore, I usually avoid using them for this purpose at all.
I don’t recommend using wood chips because they may not generate enough heat to season your smoker correctly. If you use them, you may wind up with a smoky kitchen as you season your smoker.
If this happens, be sure to open all the windows and use an exhaust fan to help with air circulation if you can.
Wood chips may also leave behind a lot of residues that will be difficult to remove, which can make for a real mess.
What oil should I use?
You should make sure that you use a high smoke point cooking oil at all times. Cooking oils with low smoke points will burn up quickly, leaving no protective layer we wish to accomplish.
